Ingredients

  • 1 cup uncooked quinoa

  • 2 cups water or vegetable broth

  • 1 cup diced cucumbers

  • 1 cup halved cherry tomatoes

  • 1/2 cup diced bell peppers of any color

  • 1/4 cup chopped red onion

  • 1/4 cup chopped fresh parsley

  • 1/4 cup crumbled feta cheese optional

  • Juice of 1 lemon

  • 2 tablespoons extra-virgin olive oil

  • Salt and pepper to taste

Directions

  • Rinse the quinoa thoroughly under running water to remove any bitterness.
  • In a medium-sized saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa and reduce the heat to low. Cover and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork and let it cool.
  • In a large bowl, combine the cooked and cooled quinoa, diced cucumbers, cherry tomatoes, bell peppers, red onion, and parsley.
  • If desired, add the crumbled feta cheese to the bowl.
  • In a small bowl, whisk together the lemon juice, extra-virgin olive oil, salt, and pepper.
  • Pour the dressing over the quinoa salad and toss gently to combine, ensuring that all the ingredients are evenly coated.
  • Taste and adjust the seasoning if needed. You can add more lemon juice, olive oil, salt, or pepper according to your preference.
  • Let the salad sit for about 15-20 minutes to allow the flavors to meld together.
  • Serve the quinoa salad chilled or at room temperature. It can be enjoyed on its own as a light meal or as a side dish with grilled chicken or fish.
