Ingredients

  • 8 round rice paper wrappers

  • 1 medium carrot julienned

  • 1 medium cucumber julienned

  • 1 red bell pepper thinly sliced

  • 1 avocado sliced

  • 1 cup shredded lettuce

  • 1 cup fresh herbs such as mint, cilantro, or basil

  • 1 cube tofu cooked/ 1 chicken breast sliced and cooked or any other source of protein (optional)

  • Gluten-free dipping sauce such as peanut sauce or sweet chili sauce for serving

Directions

  • Fill a large shallow bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable. Place it on a clean, damp kitchen towel.
  • Arrange a small portion of the julienned carrot, cucumber, bell pepper, avocado, shredded lettuce, fresh herbs, and tofu/ chicken (if using) in the center of the rice paper wrapper.
